Yes, you read that correctly. I made lasagna last night. BUT, it was lasagna with a twist! Check out the ingredients…
- 1 lb hot Italian sausage, casing removed
- 1 red onion
- 3 cloves garlic
- 1 15 oz can pizza sauce
- 1/2 c roasted red peppers
- 1/4 c extra virgin olive oil
- couples leaves of fresh basil (leave it out if you don’t have it, just freshens up the sauce a bit)
- 1 small butternut squash

I started by browning some spicy Italian sausage… then added some onions and garlic…
Then I pureed the sauce (pizza sauce, red peppers, and olive oil)… I did not have fresh basil, so I added a healthy sprinkle of dried basil…
Then I layered some sauce, some peeled and sliced slabs of butternut squash…
Topped the “noodles” with the meat mixture, and then layered it all again…
We actually poured a second can of pizza sauce on top (we like it saucy!). Into a 400-degree oven for 45 minutes…
And DONE! Allow it to sit for about 30 minutes before serving…
Is this gorgeous, or what?
If you can even believe it, this dish tastes even better than it looks. My husband took one bite, and immediately looked at me with wide eyes, nodding his head vigorously. I think that means that he liked it!
I was rich and tantalizing. I savored every bite.
